We are what we eat

If by means of this page, I am able to turn at least one meat eater into a vegetarian, my work has not been in vain.

POSITION OF MY SITE

• Recipes with meat content are strictly forbidden in this site. Not even to justify the need to consume meat due to medical reasons. “It’s all a Myth”. Pâtés, hot dogs, hamburgers, stuffing, seasonings with animal meat or other related extracts are unacceptable in my kitchen.

• Commercial products of animal origin like leather, furs, nails, teeth, bones or any other article that implies cruelty towards animals are excluded from my site.

• Bull fights are considered a savage and bloody tradition that unjustly perpetuates for many who still enjoy watching others die, worst of all, death of defenseless animals. But, as the old saying states “those who kill by the sword, die by the sword”. In my understanding, this means that everything that you do to other living beings will be re-paid back to you in equal terms.  Remember, even though you are not killing the bull by yourself, your sponsorship implies the same involvement. Equally, I raise my voice against “pit-bull” dog fights, cock fights and circus shows that mistreat animals in order to make them do human gestures and positions. Lastly, those animals forced to do agricultural and transportation tasks like horses, elephants, mules, oxen and others that are submitted to daily abuse for profits.

• Products that contain mixtures of ingredients from animal sources like gelatins (bone cartilage extract) and other, are excluded. You will be amazed at the amount of ingredients from animal origin that are contained in processed foods. White sugar will be replaced by brown sugar because most white sugar is processed with animal bone for color and texture. We will go step by step, in order for you to avoid meat in your dish and afterwards learn to cook with wholesome and less processed products. Organic products are a good alternative, but they are still too expensive for middle class consumers. Our goal must be to become vegetarians, ecology-wise, learn to cook without milk products, eggs or cheese and use every ingredient in its natural state.

• For products derived from milk, cheese (cheese pasteurizes with animal stomach fragments) look up in our glossary. Vegan cheese alternatives or vegetable type pasteurizing extracted from plants or from macrobiotic origin to achieve consistency in cheese, butter and eggs will be used in my recipes, for now. People already in a vegan diet can keep using egg and milk substitutes. These products don’t require animal sacrifice to obtain (except cheese) nevertheless I must add that there are farms where cruelty still exists even though animals are not sacrificed. I recognize I must be careful regarding this subject. It’s best not to live, than living in constant suffering. Egg consumption is a matter of further discussion because it’s a cocoon for a bird in formation. But as I said, avoiding meat in your diet will be a step by step education for the visitors of my blog. To exclude eggs from my recipes at this moment could trigger chaos, knowing that cakes, soufflés and other related products are temporary alternatives for an easy transition to vegetarianism. I personally don’t consume eggs. A good alternative to substitute eggs when mixing for fritters or veggies is flaxseed or agar-agar. This seed when boiled in water expels a colorless and tasteless gel that can be used for mixes that need compacting. Soy milk, rice milk and almond milk available in main health food stores, serve as substitutes for milk shakes, cakes and other common sweets.

• Visitors’ comments containing positions in defense of meat consumption are respected, but not accepted as a valid philosophy in this site. We already know those arguments from people that insist on eating animal protein to feed themselves properly.

Also about those who insist that our teeth are for devouring meat since the Stone Age and about those investigations regarding the need for meat for people with O positive type of blood and that only those with negative type of blood (absence of RH factor) are the ones that can be totally vegetarian. In my case, my type of blood is A- and my family is O+ type and we are all in very good health eating a vegetarian diet, even though our blood types are different. Other positions could mention those communities that live in cold and scarcely cultivated highlands like Tibet, as an example. But in those places, when a cow (or Yak) is sacrificed, is in order to feed around 20 people. Those people honor and are grateful to the animal for giving his life to feed many. This is an exceptional example in impoverished regions where food alternatives are scarce. I don’t pretend that Eskimos quit eating fish and start cultivating lettuce, ha…ha! Fortunately we enjoy having markets and supermarkets filled with plenty of food, which enables us to correctly choose on vegetarian food and avoid meat. These include health and natural product supermarkets that have a magnificent range of alternatives for not consuming meat.

I believe it is time to be grateful to the animal world for all the sacrifice they have been submitted to (not to say merciless butchery) for so many centuries, just to fill our bellies.

We must defend them and that’s why we are creating the consciousness needed to start becoming completely vegetarian. I say completely without any doubt, because after browsing with me through this site, I am sure you will start, step by step, to avoid meat in your diet. I have been vegetarian for many years and I assure you that you will feel the difference for tip to toes. A meat-eater has to be taken through a stepped process and we can not pretend him to become a vegan overnight. Everything is a transition, like when we were attending school; we went from kindergarten to 1st, 2nd, 3rd grades and so on. If one step is changed, you may not achieve the objective. Further on, it’s possible to become a raw food consumer or accept a macrobiotic diet.

Don’t think of this diet as dull or tasteless. On the contrary, the best, most delicious and nutritious meals are vegetarian. Besides, because I am a Puerto Rican, most of my recipes have a dominant Caribbean flavor, although I do my best to maintain the flavors for dishes from other Countries.

Remember… more than a satisfied palate, your body will be delighted with this diet.

If, after watching these videos, you keep consuming meat, I don’t know if I should call you a rational and compassionate human being. That is, if we define rationalization as the capacity of humans to think, evaluate and act according to optimistic criteria in order to satisfy some objective, using reason. And, irrational: as other means used by humans to take decisions in which rationalization is not the main factor in their behavior.

Remember: If don’t buy meat or sea food you are contributing to lower the demand for these products in supermarkets and therefore less animals will die. Each one of us will make the difference.
