Hello to all my vegetarian visitors and bloggers. This will be a new year full of tasty and healthy eating . I will share a bunch of interesting vegetarian recipes , (my own original recipes) which are easy and quick to prepare; but most importantly, is to reach my goal through this blog, which is to raise awareness of the dangers of eating meat and the adversary effects it has on the human body, the suffering of animals and the harm we do to the planet itself by consuming meat.
I cook every day, so I will be publishing delicious vegetarian recipes each week. Keep checking my page for updates or subscribe via e-mail, RSS feeds, Facebook page, or even Twitter!
My Details:
I’m your friend Madelen. I am 50 years old, publicist and live on the island of Puerto Rico in the caribbean. I have 3 adorable children who are now all my professional advisers in their respective fields (Laws, internet and computers, film and tv). Thanks to one of them (the boy) who is a programmer and an international Internet entrepreneur is that I am able to share my vegetarian recipes with all of you. As for me, I dominate computers (Mac and PC platform) with all its programs and it allows me to easily work on the page. I also dominate very well my digital camera and take photos and upload them immediately once I cook one of my recipes. I also thank my husband, who provided me from the beginning to be able to connect to the computer world when it came into fashion and who has now inspired me to be more organized. He is an independent travel agent, therefore I have traveled to many exotic places and learned the culinary world in countries like Egypt, India, Nepal, Mexico, USA, Europe, Yugoslavia (now Bosnia) and the Adriatic coast, the islands of the Caribbean and others. Returning to the subject, I learned to be a vegetarian as a teenager, because I grew up with parents who were practitioners of exquisite cuisine. I learned to cook every typical dish of Puerto Rico, but I was also adding to my menu recipes from all the countries I visited. I also have an extensive collection of cookbooks with which I have been inspired andt modified the ingredients to my vegetarian style (no meat). I used to eat meat from a young age as most of you I’m sure, but my 15th birthday came to me with valuable information, and the beginning of the vegetarian movement that really shocked me beyond words. It raised all my senses and I finally could see the ignorance in me about eating meat. The impact was so great in me that my parents had to modify their menu and exclude meat. Since then, I have been a vegetarian and even my children as babies were fed vegetarian food as well. Being said that, I will also be supporting moms who want to go through their pregnancies with a healthy vegetarian diet as I did with my 3 babies; Of course, always with the guidance of my doctor and obstetrician, plus vitamins. My doctors did not quite agree with me 100%, and even joked that I would give birth to a carrot. At the end, I was proud to say that my children were the envy of many mothers who lived enslaved to their doctors strict orders and their medicines.
While raising my children, I taught others about vegetarian cooking, I had a lot of students. Workshops were live in my kitchen and we prepared all the recipes in a day. Even students scrambled upon each other to buy the remaining food to take to their family. A very interesting part of the course, included an excursion to go shopping at a natural “health food” shop and the local Plaza marketplace. Here I explained how to buy, what to buy and from whom.
Around this same time, I had an approach to make appearances at a cooking section in an international television, show but I must confess that being a 22 year old, I got cold feet and refused. Now I even cook up on my sleep and cater vegetarian food for certain friends. I get requests all the time to cook vegetarian meals for special occasions or guests in Christmas time, I also cook many Puerto Rican dishes, but with a vegetarian touch.
In conclusion, my experience has taught me not to criticize people who eat meat, as I understood it’s very easy to eat meat when society is not informed and has not seen the full processes of the meat industry, from beginning to end; but you soon everyone must find out the truth. I admit that when I used to eat meat I like it’s taste, but this was the result of a learned behavior that I was subject to every day without knowing there were other options on the menu, and not even mention the consequences associated. Now when I go out to dinner with clients or with friends, they get surprised when I don’t accept their invitation to order a good cut of beef. They are astonished, but It’s a good moment me to talk to them about vegetarianism. They usually leave thinking about their daily diets…
The daily cruelty and inhumane treatment that animals get, I think it’s more than enough reason to become a vegetarian. Do you have any idea on the number of animals that die daily to supply the meat industry? It’s an astronomical number you never knew it’s even possible. I’ll tell you later in my information section, and you will ultimately be who will decide whether to continue the consumption of meat even with what I will show you in my website. The important thing is to teach others what I learned and see things from a different perspective. The world is constantly changing and it’s good to adapt to daily challenges; So, I invite you to join me in this fantastic cooking experience … and make the difference.

My backyard - or haven to relax and meditate – I myself have designed and planted everything. It took me Many hours of hard work and effort, but has been worth it. Still not finished, it needs some minor touches. This greatly inspires me for ideas for new dishes and exotic blends.

“Baby Canito” -always sleeping. It’s a very good cat who knows the art of manipulating his owners. It lives up to its feline character, because there are times that he looks like a mini tiger sort of…

Here is “canito” not so sleepy … be careful with the small tiger… he’s got a bad attitude apparently…

“Chaya”: Try to locate it in the photo… It is green like hope with a long tail and lives in my yard hidden in my dates palm tree. He likes my vegetarian menu. She goes out to get some sun and eat my lettuce, fruits and vegetables when it smells the scent of my kitchen. I guess she’ll be sitting eating with us in the table some time soon…

I enjoyed your introduction essay here. It’s interesting to find out how others become vegetarian. I started to question eating meat when I was a pre-teen. By 12 years old, I decided I would become a vegetarian when I was allowed. I remember being a painful reminder to my family when I would say things like, “We’re eating Tommy Steaks” during dinner. Tommy was my sister’s pet pig. We lived on a small family farm, and had lots of vegetables growing. I loved to watch the gardens grow! I think it’s wonderful to grow your own food. I think it is difficult to be a vegetarian in Puerto Rico, and I too, cook everyday. I enjoy trying to adapt Puerto Rican recipes so that my family can appreciate their Puerto Rican culture even though I am from the United States. I also have a blog and sometimes post my own dinner ideas. Recently, I did a post about how to make “Healthy Soup” from whatever you have available in the kitchen or garden.
I’m happy to introduce myself to another vegetarian. I appreciate your effort to educate people about the benefits of going vegetarian. There is so much light on this beautiful island, I’m sure you are a shining sun to your family and community. I hope you can visit my blog sometime. ♥
